Vegan Gingerbread Biscuits!

So every Christmas holiday I always get back into baking and I remember over the past couple years I have shared recipes with you guys so I decided to do another one but this year but to make it vegan. I have over the past year been making more a conscious decision to eat vegan but by no means do I claim to be one, mama still loves cheese. However, I am trying to eat as plant based as possible. This has then made me think twice about what I wanted to bake this Christmas so I decided to look up some vegan recipes for gingerbread men and I changed a couple to suit me as I felt some of they were super off or I just got the measurements wrong as I followed an American recipe lol (LINK HERE).

For my biscuits I followed the Veggieful recipe and then just changed a few measurements as when I had my mixture to knead and cut out I felt it was more of a liquid mixture rather than doughy biscuit that I needed.


1 cup of plain flour

3/4 of a tablespoon in ground ginger

1 teaspoon of ground cinnamon 

3 1/4 of soft brown sugar

half a teaspoon of baking powder

2 1/4 cups of melted vegan butter

1 tablespoon of golden syrup 

2 cups of icing sugar

4 tablespoons of water 

My method was basically to just mix everything together and then start kneading the mixture. When I followed the Veggieful recipe it was too loose so I added more flour adding up to me using about a whole cup to a cup and a half of it to thicken it and make it into more of a dough. When everything was kneaded together perfectly I kneaded a bit more as this was a tip I learn’t when I very first started to bake. After this was done I layed plain flour over my kitchen counter surface and then started to roll out my dough about 1cm-1.5cm thick. I then used cookie cutters in the shape of stars and Christmas trees, yes I wish I had ginger bread men cutters but it seems they are sold out everywhere, sad face emoji. 

I then cooked these in a pre heated oven on gas mark 4 for 25 minutes. My oven takes a very long time to cook so I would say after 15 minutes watch over your biscuits to make sure you don’t catch them. There you have it perfectly guilt free vegan gingerbread biscuits. Now just to decorate with anything of you choice I decided to keep it simple and just to mix icing sugar and couple tablespoons on water together and then drizzle this over the top and leave to set. Perfect for Christmas Eve when watching films or even make them yourself and give as stocking fillers.
